I was at Whole Foods this past weekend buying our weekly staples but had two extra items to find: a gluten-free flour tortilla and shredded dairy-free cheese. Cheesy Chicken Enchiladas are on our Green Chef menu this week. I have a gluten-free daughter who’s tired of the taste and texture of corn tortillas and a dairy-free daughter who just wants some normal cheese, please!
I want all children to embrace their genetics for health and eat accordingly, but I get lazy and easily discouraged trying new products in our home. So I focused on how they’d smile, biting into a Cheesy Chicken Enchiladas adapted especially for them (IF it tastes good)! I’d be ecstatic if we found two new gluten-free, dairy-free alternatives that passed the family taste-test.
I stood in front of the tortilla display and picked up my best guess. At that exact moment, another woman walking behind me said to her friend: “We love those Siete almond flour tortillas.” Bingo! I put the other back, grabbed that one, and headed to the dairy-free cheese section for the first time in years. I saw another brand, Violife, and put the bag of cheddar shreds into the cart. Voila, this mama was rockin’ her weekly shopping chore.
Funny story. My cheese-loving girls mistook the cheddar shreds for standard cheese and loaded it into their turkey chili. No complaints! Great texture and taste. Cheesy Chicken Enchiladas are tonight, so we’ll see if the almond flour tortilla flies.
Gluten-free dairy-free living seems hard when we focus on pain: losing something we love. When we focus on the pleasure of feeling symptom-free, eating according to our genetics becomes easier.
